Sausage Casing Size Chart - I know it is sometimes a matter of preference. It would help a lot having that third person. I would not go with the 17mm. Per 1 inch weight of pork in a 64mm casing 1.75 oz./inch x 12 inches = 21 ounces per 12 of casing. Just picked up a 5# stuffer it comes with 15mm. One person holding the casing on tube and also helping fill the hopper with meat. The sausage comes right out.

I get compliments about how the casing are very delicate and have a perfect snap when you bite into the sausage. Remember, the stick will shrink in size as it is smoked/heated or dehydrated. Thought i would post up what i do with natural casings. I was hoping to get a snack stick tube. Don't let the phrase peel off casings worry you. All that being said, i have no idea how these guys come up with their numbers.
